Fish Tacos!

Since leaving California, I had yet had a Fish Taco that was any good. (Nastiest ones can be found at Cafe Sabor.) I was craving some the other day, and had some tilapia in the freezer that was calling my name. So off to Food Network I went and found this...

Fish Tacos with Chipotle Cream

Fish Tacos with CHIPOTLE?! Oooooh I love chipotle, one of the best flavors in the world! With a little cilantro.....ooo mouth watering. (Matt says I have Mexican taste buds) Not to mention it's an Ellie Krieger recipe, so Hello Healthy!  It's sooo easy to make, try it out!




Fish:

2 tablespoons olive oil

2 tablespoons freshly squeezed lime juice

1/4 teaspoon salt

Freshly ground black pepper

1 pound white flaky fish fillet, like tilapia or halibut

Chipotle cream:

1/2 cup plain nonfat yogurt

2 tablespoons mayonnaise

2 teaspoons chipotle pepper, in adobo sauce

8 (6-inch) corn tortillas

1 1/2 cups shredded green cabbage or lettuce

1/2 cup corn kernels (thawed if frozen)

1/4 cup fresh cilantro leaves

Lime wedges

Directions

In a small bowl, whisk together the oil, lime juice, salt and pepper. Pour over the fish fillets and let marinate for 20 minutes. Put the yogurt into a strainer lined with apaper towel and place over a bowl to drain and thicken for 20 minutes.

Remove the fish from the marinade and grill on a preheated grill or nonstick grill pan over a medium-high heat until cooked thorough, about 3 minutes per side. Set the fish aside on a plate for 5 minutes.
In a small bowl combine the thickened yogurt, mayonnaise, and chipotle pepper

Heat the tortillas on the grill or grill pan for 30 seconds on each side.
Flake the fish with a fork. Top each tortilla with 1 tablespoon of the chipotle cream. Top with fish, cabbage, corn and cilantro and serve with lime wedges.

This week I've tried two new recipes and OOOOOOOOmigosh, YUM! So lucky you, I'm sharing them with you because I'm nice like that.

First.....
I'm pretty sure this is the most delicious Asian-ish orange chicken I've ever made, and so easy! I just cooked up some rice and stir fry veggies as sides. Next time I'll add some red pepper flakes and a tad bit of corn starch and I'll have the same flavor as Panda Express' Orange Chicken which I luuuuuuve.

So here it is, straight from one of my favorites, Delish.com




3/4 cup(s) fresh orange juice

1/3 cup(s) orange blossom or clover honey

1 teaspoon(s) grated ginger

1 teaspoon(s) garlic

1 teaspoon(s) orange zest

1 teaspoon(s) salt

1/8 teaspoon(s) ground black pepper

4 (6 ounces each) boneless, skinless chicken breasts, trimmed

1 teaspoon(s) vegetable oil

1 teaspoon(s) toasted sesame oil

1 teaspoon(s) toasted sesame seeds
Directions



1.Combine juice, honey, ginger, garlic, zest, salt, and pepper in a bowl. Add chicken; stir to coat. Cover; refrigerate 30 minutes.

2.Heat a large skillet over medium heat until hot; add vegetable oil and swirl to coat. Lift chicken from marinade and let excess drip back into bowl. When oil is hot, add chicken and cook over medium heat 3 minutes per side, or until golden brown.

3.Add reserved marinade to skillet and boil over medium-high heat, turning chicken once or twice, 3 to 5 minutes, or until chicken is cooked through and sauce is reduced by half. Transfer chicken to a cutting board, cut into diagonal slices, and arrange on a platter. Stir sesame oil into thickened sauce and spoon it over chicken. Sprinkle with sesame seeds.

I adore this little man. Yes he keeps me on my toes, and sometimes causes me to swear very loudly in a store when he tips out of the shopping cart. (I wasn't swearing at him, just swearing in fear of what just happened) Yes, he's made us decide we can't take him out to eat with us anymore because he thinks high pitched screaming is the only way to communicate what he wants. He's an active guy that wont sit still in church and would rather walk circles around the Sunday school teacher. When he's mad he headbutts us or the floor. When he's bored sitting in a public place, he decides to empty the contents of my purse by individually throwing them across the room. Yes, he's a beast, but I love him so much.
When I'm having a bad day, he knows. He'll rest his hand on my knee or shoulder, tilt his head and smile. His smile is contagious.
When he's tired he'll reach up for me to hold him, and falls asleep on my shoulder.
He's an explorer and has expensive taste buds, liking shrimp, crab and steak.
He dances and sings, and loves to watch baseball with his Daddy.
We are so blessed to have him.
Oh boy, does he keep us on our toes, and we wouldn't have it any other way.

Busy Saturday Morning

My day begins at 7:30 am tomorrow. I must be crazy! First I get to pick up my first Bountiful Basket, Whoot Whoot! Who would have known a basket of fruit and vegetables would be so exciting?!
Then, after i pick up my basket, I'll speed off to the salon for two Cut&Colors. One of my clients is changing it up a bit, which is another exciting thing. Why is this so exciting? Well let me tell you.
For the past year I've had only a handful of new clientele because I've been working only 2 days a month. So since I see the same people every 6-8 weeks, I'm also usually doing the same thing every 6-8 weeks. It's become pretty redundant and left me feeling in a rut.
I've tried to pick up on some hobbies, but turns out hobbies require money that well as "college students", we just dont have.
Soo to amuse myself I've started teaching James the ABC song.
So far he goes like this:
"A-B-D-D-D-F- O......"
Yep the letters aren't right, but he's got the tune down, so hey! Progess lol

James




Well one of my fears about having children has come true. I have an accident prone child. Pre-James I knew Matt's family were accident prone as well, such as broken bones, etc. but I always hoped my child would follow after me. No broken bones, no serious injuries of any kind, just a black eye once as a kid. Yeah....right. So far James has had....
1 black eye
3 bloody lips
1 scraped knee
and about a dozen bruises on his head and face from diving into coffee tables and such.

Most recently, after his black eye and coffee table bruise had faded, I was spraying Lysol in the living room and James came running in, and BAM! ran right smack into the bottom of the can...
Instant Goose Egg, with a crescent shaped bruise and oh wait is that what i think it is? Yep a little blood.
Oh My Gosh!
I swear I need to buy a helmet for this child!

When Matt is studying James doesn't like the lack of attention he's receiving so he climbs up on Matt's lap and "helps" Daddy study and "underline" important stuff


 


Its a beautiful sunny day, and I'm going to enjoy it :)
